Rich in mineral salts and vitamins, the liver should be part of a balanced diet. It primarily contains iron in the form of “heme”, which is more efficiently absorbed by the body. It is also rich in vitamins B2, B5, B6, B12, as well as vitamin D (important for healthy bones), vitamin A (an antioxidant), niacin, zinc, phosphorous, and potassium.
