Their race is composed of a hybrid of three bovine species : the reproducing females are a Hereford-Simmental crossbreed, which makes for a cow with an excellent maternal quality, and the reproducing male is a full-blooded Angus. This crossbred race has an excellent dark pink veal meat that is very tender and tasty and that doesn\u2019t shrink when cooked. Basically, this genetic combination allows us to optimize the desired qualities of the three bovine races to obtain a delicious meat for the most discerning palates. Contrary to the method of raising milk-fed veal powdered milk, a naturally nursed calf is nursed for its entire life on his mother\u2019s teat, in the fresh air on the pasture. Unlike the calf that we find in our butchers as the \u201d veal \u201d or \u201d grain-fed veal \u201d from cows dairy character as the race \u201d Holstein \u201d , our natural calf is made \u200b\u200bfrom pure beef breeds blood , it offers without meat marbling and fat content of less than l% . All producers who raise the calf Chez-Nous have the same specifications. Purebred calves (and only Purebred because no crossing is allowed with other types of cattle ) are born from their mother and naturally feed by sucking milk from their mother. As the mother does not always produce enough milk to complete the growth of the calf, it can complete its food with grains. We call this type of farming : \u201cCalf with mother .\u201d The calves are fed naturally in the mother and receive no implant hormones, no added antibiotics , no growth factor and no animal protein.
