The most tropical species of tuna. Yellowfin Tuna is the most tropical species of tuna and is known for its flashy yellow stripe. The fish is bright red when raw, but cooks up to a brown/tan color. It has a mild, meaty flavour profile and is firm with large, moist flakes. It is excellent raw, but also lends itself well to searing, grilling or broiling cooking methods.
